Thanks to the combination of red cherries, orange pumpkin and green spinach, this salad immediately attracts attention. With chicken, it becomes even more satisfying and healthy, and with aromatic herbs – original and piquant.
Ingredients
- Chicken fillet - 1 piece
- Onion - 1 piece
- Spinach - 1 bundle
- Cherry tomatoes - 150 g
- Pumpkin - 150 g
- Olive oil - 2 tbsp.l.
- Ground red pepper - 1 pinch
- Italian herbs - 1 tsp.
- Salt - 0,5 tsp.
- Garlic - 1 clove
- Spices and seasonings (for chicken) – 1 tsp.
Step-by-step cooking recipe
Roll the chicken fillet in spices, wrap in foil and bake for half an hour at 180-200 degrees.
Cut the chicken into strips or simply divide into fibers.
Cut the onion into feathers and pour boiling water for a minute.
Rinse the spinach and cut the cherry in half.
Cut the pumpkin into medium cubes and fry in a spoonful of olive oil until soft.
Mix the remaining oil, crushed garlic, herbs, salt and pepper, and season the salad.
