This is one of my favorite salads with mushrooms – it is bright, beautiful and very satisfying. Mushrooms, quinoa and avocado are perfectly combined with each other. Before serving, I advise you to sprinkle it with citrus juice and decorate with a slice of any favorite citrus.
Ingredients
- Quinoa - 100 g
- Salad mix - 150 g
- Avocado - 2 pieces
- Mushrooms - 300 g
- Bow purple - 1 piece
- Zucchini - 1 piece
- Bell pepper - 2 pieces
- Sesame - 2 art.l.
- Olive oil - 2 tbsp.l.
- Orange juice - 2 art.l.
Step-by-step cooking recipe
Boil the quinoa according to the instructions.
Chop the mushrooms and fry until the liquid evaporates.
Randomly chop fresh zucchini, avocado, pepper and purple onion.
Mix the salad and season with olive oil with orange or other citrus juice.
Sprinkle everything with sesame seeds.
