In Asia, enoki mushrooms are as popular as oyster mushrooms or champignons here. They are absolutely harmless and even considered useful. They can be consumed raw or simply poured with boiling water. I'm telling you an excellent recipe for salad with enoki.
Ingredients
- Funchosa - 300 g
- Pork (boiled) – 300 g
- Mushrooms (enoki) – 100 g
- Garlic - 1 clove
- Hot red pepper - half a string
- Sesame oil - 2 tbsp.l.
- Rice vinegar - 2 tbsp.l.
- Salt - to taste
- Water (boiling water) – 3 l
Step-by-step cooking recipe
Put the funchosa in a saucepan, pour boiling water and cover for 5 minutes.
Flip into a colander and rinse under cold water.
Wash the mushrooms, peel off the hard edges and pour boiling water for 2 minutes.
Flip the mushrooms into a colander and leave all the liquid to drain.
Chop the pork and hot pepper.
Mix the funchosa, pork, red pepper and enoki mushrooms.
In a separate container, mix rice vinegar, sesame oil, garlic and salt passed through a press.
Pour the dressing into the salad and mix. You can add hot sauce, ketchup or fried peanuts.
