Coarsely chop all the vegetables and disassemble the rosemary into leaves.
Pour water or vegetable broth over potatoes and beets. Cook for 15 minutes.
Add the remaining vegetables and cook for another 15 minutes until tender.
Add spices and rosemary, and let the borscht brew a little under the lid.
