Once in one of the cookbooks I came across a recipe for soup with dumplings from semolina and potatoes. The dish was distinguished by its simplicity, accessibility and speed of preparation. I tried to cook and was pleasantly surprised by the result. Now I am happy to share the recipe with you!
Ingredients
For soup:
- Green onion - 2 of the stem
- Parsley - 3 twigs
- Salt - to taste
- Meat broth - 2 l
For dumplings:
- Chicken eggs - 2 pieces
- Potatoes (boiled in uniforms) – 250 g
- Semolina - 3 art.l.
- Butter - 20 g
- Ground black pepper - to taste
- Salt - 0,5 tsp.
Step-by-step cooking recipe
Peel the boiled potatoes and grate them on a fine grater.
Finely chop the green onion and parsley.
Mix the potato mass, eggs, semolina, salt and ground black pepper.
Add the melted butter and knead everything until smooth.
Boil the meat broth, add the dumplings and cook for 7 minutes over low heat.
Add salt, sprinkle with parsley, green onions and remove from heat. Infuse the soup under the lid for 10 minutes.
