At the height of the pumpkin season, I want to use it wherever possible. I offer such a wonderful chicken soup with vegetables and herbs! Plus, you won't need a blender here, unlike most other pumpkin recipes.
Ingredients
- Chicken - 300 g
- Pumpkin - 200 g
- Bell pepper - 1 piece
- Beans (canned) – 100 g
- Tomatoes - 2 pieces
- Tomato paste - 1 tbsp.l.
- Onion - 1 piece
- Carrots - 1 piece
- Celery - 1 piece
- Green onion - 3-4 pen
- Paprika - 1 tsp.
- Hot red pepper - 1 pinch
- Sugar - 0.5 tsp.
- Salt - 0.5 tsp.
Step-by-step cooking recipe
Boil the chicken until tender, remove, slice and return to the boiling broth.
Chop all the vegetables. Put the pumpkin cubes in the soup.
Fry the onion, celery, pepper and carrot until golden, and also send it to the pumpkin.
Cook everything together for 5-7 minutes and add chopped tomatoes, tomato paste and beans.
Mix the soup thoroughly, season and boil for another 5 minutes.
Before serving, sprinkle the soup with green onions.
