Cut potatoes, zucchini, pepper and celery into cubes. Chop the onion. Grate the carrots and beets on a grater.
Put potatoes and beets in boiling water or vegetable broth.
After 15 minutes, add the remaining vegetables, except zucchini.
After another 10 minutes, add the zucchini, spices and garlic. And after 5 minutes, remove the lean borscht from the fire.
