Classic Ukrainian borscht is a rich meat dish. But what if you like its taste so much, but you want to do without meat? In fact, it's easier than simple, and further in the recipe I will tell you what vegetables you will need, how much and how to cook them.

Step-by-step cooking recipe

Cut potatoes, zucchini, pepper and celery into cubes. Chop the onion. Grate the carrots and beets on a grater.

Put potatoes and beets in boiling water or vegetable broth.

After 15 minutes, add the remaining vegetables, except zucchini.

After another 10 minutes, add the zucchini, spices and garlic. And after 5 minutes, remove the lean borscht from the fire.
