Every housewife has her own secrets on how to cook delicious pickled gherkins. This French recipe became one of my favorites a few years ago. It is simply impossible to refuse spicy crispy cucumbers.

Mix the gherkins with salt. Place on a cotton towel and hang for 2 hours.
Send tarragon to the jar and then lay out the gherkins in layers, shifting them with chopped shallots and garlic.
Add the remaining spices to the jar.
Boil the vinegar and pour over the cucumbers, a little before reaching the edge.
Close the jar tightly and leave the cucumbers in a cool dark place for at least 3 weeks.
