To all lovers of vegetable preparations, I strongly advise such a lecho of zucchini with rice. This is not just a salad or an appetizer, but a full-fledged main course. It will help out when you don't want to cook, and it will also come in handy even when hiking and traveling.

Pour the washed rice with water and boil until almost ready.
Finely chop the onion and fry in oil for 5 minutes. Add the carrot to the carrot and after another 10 minutes - chopped pepper.
Cook everything together for another 10 minutes and then add the chopped tomatoes.
After another 10 minutes - zucchini, sugar and salt.
Continue to simmer for 15 minutes. Add rice, chopped dill and garlic.
After another 5 minutes, pour in the vinegar and roll the lecho into sterile jars.
