Pick mushrooms, clean, rinse well under running water.
Place the bluefin in a cooking pot, pour in enough cold water and bring to a boil over medium heat. Then boil for 20 minutes, removing the foam, flip it into a colander, rinse well again and let the water drain.
Fill the washed mushrooms with clean water again, add salt and spices and bring to a boil over medium heat. Boil the mushrooms for 15-20 minutes.
Pour 2 tsp vinegar into pre-sterilized jars, then use a slotted spoon to fill the jars with hot mushrooms and pour boiling marinade to the top. Seal the jars tightly, turn them upside down, wrap them up and leave them to cool completely. Store the cooled mushrooms in a cool, dark place.
