Aivar sauce is very popular in Serbian and Bulgarian cuisine. In each region, it is prepared differently and always turns out delicious. I like the recipe of aivar with tomatoes. Boil it a little longer than usual, add vinegar and roll it up for the winter.
Ingredients
- Bell pepper - 3 kg
- Tomatoes - 1 kg
- Hot red pepper - 2 pod
- Garlic - 5 cloves
- Olive oil - 100 ml
- Vinegar - 100 ml
- Paprika - 1 tsp.
- Sugar - 3 art.l.
- Salt - 1 tbsp.l.
Step-by-step cooking recipe
Cut the hot pepper lengthwise, peel from the seeds and chop.
Put the bell peppers and tomatoes on a baking sheet and bake for 30 minutes at 200 degrees.
Remove the vegetables from the oven, peel, seeds and transfer to a blender bowl.
Add chopped garlic, sugar, salt, paprika, olive oil, hot pepper and chop.
Put the mass in a saucepan and boil over low heat for 20-30 minutes. Do not forget to stir, as the sauce may burn.
Pour in the vinegar, stir and remove from the heat after a minute.
Arrange the ivar sauce in sterilized jars, roll it up and wrap it with a warm blanket.
