I love all kinds of vegetable preparations for the winter, and this kind of anchor-bens has remained one of my favorites for years. This time I will tell you in detail how best to cook it with zucchini. Serve it as a salad, side dish, or use it when cooking other dishes.
Ingredients
- Zucchini - 2 kg
- Bell pepper - 500 g
- Onion - 700 g
- Tomatoes - 1 kg
- Garlic - 1 head
- Sugar - 250 g
- Salt - 30 g
- Tomato paste - 100 g
- Water - 500 ml
- Vinegar - 50 ml
- Vegetable oil - 250 ml
Step-by-step cooking recipe
Randomly chop all the vegetables.
Mix tomato, water and oil. Add sugar and salt, and bring to a boil.
Add the vegetables to the tomato and simmer for 40 minutes.
Add vinegar and garlic. Simmer for another 5 minutes.
Roll up the lecho ankl-bens in sterilized jars for the winter.
