Ingredients
- Tangerines - 3 pieces
- Egg whites - 2 pieces
- Sugar - 400 g
- Agar-agar - 8 g
Step-by-step cooking recipe
Remove 1 tbsp.l. zest from tangerines.
Squeeze the juice out of the fruit in any convenient way, strain.
Mix the resulting juice with the zest, 100 g of sugar and heat over low heat to 50 degrees.
Add agar-agar and cook for 4 minutes, stirring frequently. The syrup should boil well.
Beat the cooled proteins with the remaining sugar until sharp peaks.
Without stopping the mixer, pour in a thin stream of tangerine syrup. Whisk everything together for another 2-3 minutes.
Put the mass in a pastry bag, put on a suitable nozzle. Place the marshmallows on a silicone mat or baking sheet covered with baking paper. Dry for 1 day at room temperature.
