In the season of fragrant citrus fruits, do not miss the opportunity to pamper the family with tangerine marshmallows. The airy dessert is prepared on agar-agar, so it always stabilizes perfectly. In addition to the specified list of ingredients, you will need a mixer and a pastry bag with nozzles.

Remove 1 tbsp.l. zest from tangerines.

Squeeze the juice out of the fruit in any convenient way, strain.

Mix the resulting juice with the zest, 100 g of sugar and heat over low heat to 50 degrees.

Add agar-agar and cook for 4 minutes, stirring frequently. The syrup should boil well.

Beat the cooled proteins with the remaining sugar until sharp peaks.

Without stopping the mixer, pour in a thin stream of tangerine syrup. Whisk everything together for another 2-3 minutes.

Put the mass in a pastry bag, put on a suitable nozzle. Place the marshmallows on a silicone mat or baking sheet covered with baking paper. Dry for 1 day at room temperature.
