Who said that the sauce must be tomato only? This time we will prepare a vegetable version with a variety of ingredients. You don't even need a lot of spices here – the taste is already quite complex. And at the same time I will tell you how to roll up such a sauce for the winter.
Ingredients
- Tomatoes - 500 g
- Bell pepper - 500 g
- Zucchini - 500 g
- Onion - 300 g
- Carrots - 300 g
- Celery - 200 g
- Garlic - 0.5 heads
- Chili pepper - 2 pieces
- Tomato juice - 300 ml
- Vegetable oil - 100 ml
- Sugar - 2 art.l.
- Salt - 1 art.l.
- Spices and seasonings - 1 art.l.
- Vinegar - 70 ml
Step-by-step cooking recipe
Peel all the vegetables and chop them in parts in a blender with garlic and chili.
Add tomato juice and oil, and simmer everything over low heat until thickened for about a couple of hours.
Add all the spices and simmer for another 10 minutes.
Add vinegar and roll the vegetable sauce into sterile jars for the winter.
