These canned food will help you out a lot when there is no time to cook. A hearty Greek salad with beans is a great side dish, a lean dish and a quick snack. For cooking, you will need seasonal vegetables and any kind of beans.
Ingredients
- Beans - 500 g
- Tomatoes - 500 g
- Bell pepper - 500 g
- Carrots - 200 g
- Onion - 200 g
- Tomato juice - 1 glass
- Vegetable oil (odorless) – 60 ml
- Vinegar - 2 art.l.
- Ground black pepper - 0,5 tsp.
- Mint (dried) – 0.5 tsp.
- Sugar - 80 g
- Salt - 60 g
- Water - 2,5 l
Step-by-step cooking recipe
Pre-soak the beans for 4 hours in cold water.
Rinse, place in a saucepan and fill with fresh water.
Boil until half cooked and discard in a colander.
Chop tomatoes, peeled bell peppers and onions. Grate the carrots.
In a deep saucepan, mix the boiled beans, tomatoes, bell peppers, carrots and onions.
Add tomato juice, butter, sugar, salt and spices.
Simmer everything together for 50 minutes, pour in the vinegar and immediately remove from the heat.
Arrange the Greek salad in jars, roll it up and wrap it well with a warm blanket.
