Catch one of my favorite recipes of patissons for the winter – this time in Bulgarian. Delicious, crispy, easy to prepare – an ideal vegetable preparation. Small patissons can be rolled up entirely, and large ones cut into a couple of pieces.

Step-by-step cooking recipe

Randomly chop the vegetables and arrange all the ingredients with garlic and herbs in sterile jars.

Pour boiling water and leave to cool under the lids.

Drain this water, add sugar, salt, spices and vinegar, and boil again.

Fill the patissons again and roll them up for the winter.
