Harvesting of eggplant, pepper and carrots for the winter

One of my favorite preparations for the winter simply because it is fantastically versatile. A ready–made snack or side dish, a dressing for soup, an addition to stewed vegetables, a base for sauce - all in one. Be sure to try this recipe!
Ingredients
- Eggplant - 3 kg
- Carrots - 2 kg
- Bell pepper - 2 kg
- Tomatoes - 500 g
- Onion - 500 g
- Vegetable oil - 1 glass
- Greenery - 100 g
- Sugar - 3 art.l.
- Salt - 3 tbsp.l.
Step-by-step cooking recipe
Wash all the vegetables. Cut eggplants into cubes, carrots and peppers into thin strips, and chop tomatoes and onions in a blender.
Fry the carrots in oil, and after a couple of minutes add pepper and eggplant.
When the vegetables become softer, pour in the tomato mass, add salt, sugar and chopped herbs. The amount of salt and sugar vary according to your taste.
Simmer the vegetables for about 40 minutes, stirring occasionally, arrange in jars and roll up.
