Beetroot and green tomato caviar for winter

Eggplant or zucchini caviar has long been a classic. What about a more original version? For example, I suggest trying caviar from beets and green tomatoes. It even sounds interesting, and what an excellent taste!
Ingredients
- Green tomatoes - 3 kg
- Beetroot - 1.5 kg
- Carrots - 1.5 kg
- Onion - 1 kg
- Garlic - 1 head
- Salt - 3 tbsp.l.
- Sugar - 2 art.l.
- Vinegar - 3 art.l.
- Vegetable oil - 500 ml
Step-by-step cooking recipe
Put all the vegetables through a meat grinder.
Add butter, sugar, salt and spices to taste. Boil for 1.5 hours on low heat.
Add crushed garlic and vinegar, and cook for another 5-7 minutes.
Roll the caviar into sterile jars.
