Scald oranges with boiling water, peel and pass through a meat grinder.

Cut the pumpkin pulp into small cubes and place it in a saucepan.

Add water, half the sugar and cook for 20 minutes over low heat.

Peel and finely chop the ginger root.

In a saucepan with pumpkin, add chopped ginger, a billet of oranges, star anise and the remaining sugar. Boil everything together for 10 minutes over low heat.

Catch the star anise and throw it away. Puree the mass with an immersion blender.

Pour in the lemon juice and cook for another 10 minutes, stirring occasionally. Arrange the jam in jars, roll up and turn upside down.
