Seasonal Transcarpathian lecho is a great way to keep the summer mood for winter. The freshest young vegetables are used with the addition of aromatic spices and vinegar. This recipe is easy to prepare and is ideal for harvesting for the winter.
Ingredients
- Bell pepper - 1 kg
- Onion - 200 g
- Tomatoes - 500 g
- Smoked sausage - 200 g
- Paprika - 3 tsp.
- Apple cider vinegar - 100 ml
- Salt - 2 art.l.
- Spices and seasonings - 1 art.l.
- Sugar - 2 tbsp.l.
- Vegetable oil - 100 ml
Step-by-step cooking recipe
Randomly chop all the vegetables.
Fry the onion in oil. Add pepper and tomatoes after 10 minutes.
Simmer vegetables for half an hour and add chopped sausages.
Simmer for another half hour and add the vinegar and all the spices.
Simmer the lecho for another 5 minutes and roll it into sterile jars.
