I really like to add some apples to vegetable caviar, including zucchini. They give a pleasant fruity sourness, which so harmoniously complements the snack. I advise you to choose sour or sweet and sour varieties.
Ingredients
- Zucchini - 3 kg
- Onion - 300 g
- Apples (sour) – 450 g
- Carrots - 450 g
- Garlic - 5 teeth
- Vegetable oil - 80 ml
- Tomato paste - 70 g
- Vinegar - 35 ml
- Sugar - 1-2 tbsp.l.
- Salt - 1 tsp.
- Spices and seasonings - 1 art.l.
Step-by-step cooking recipe
Peel and randomly chop vegetables, apples and garlic.
Add the oil and simmer everything together for about 2 hours on low heat.
Chop the caviar with a blender, add the tomato and all the remaining ingredients and bring to a boil again.
Boil the caviar for 5-7 minutes and roll it into sterilized jars.
