You can buy a vegetable snack in the store, but it's better to cook it yourself. Don't know how? Use this wonderful recipe and you will get delicious eggplant caviar for the winter. In order not to cut vegetables by hand, we will pass them through a blender.

Step-by-step cooking recipe

Peel the eggplants, cut into large pieces and pour salted water for 15 minutes.

Chop eggplants, carrots, tomatoes and peeled onions in a blender.

Fry the onion in oil until golden brown.

Add the carrots and simmer for another 10 minutes.

Add eggplant, salt and ground pepper. Simmer for 20 minutes, stirring occasionally.

Add tomatoes and continue cooking until excess moisture evaporates.

Pour in the vinegar, stir and remove from the heat after 1 minute.

Fill the prepared jars with hot caviar and roll them up.
