Georgian tkemali sauce is famous all over the world for its piquancy and sour taste. It is usually made from cherry plum, but sometimes other ingredients are also used. Excellent tkemali is obtained from red currants. You can cook it according to this recipe.
Ingredients
- Red Currant - 1 kg
- Hot red pepper - 1 pod
- Garlic - 150 g
- Apple cider vinegar - 80 ml
- Fenugreek - 0,5 tsp.
- Ground black pepper - 0,5 tsp.
- Sugar - 2 art.l.
- Salt - 1 tsp.
Step-by-step cooking recipe
Put the red currant in a saucepan and mash it well with a masher.
Cut the hot pepper in half and peel off the seeds.
Grind hot pepper and peeled garlic in a blender.
Add sugar, salt, spices and a spicy mixture to a saucepan with a berry preparation.
Simmer for 20 minutes.
Pour in the vinegar, soak for another 2-3 minutes and close in the prepared jars.
