Summer is the time of harvest of fresh vegetables and fruits, but what to do when the season passes? One of the solutions is to stock up on vegetable preparations, and among them green pepper lecho for the winter. It can be used as an independent dish or added to other recipes.
Ingredients
- Bell pepper (green) – 2 kg
- Tomatoes - 1 kg
- Onion - 3 pieces
- Hot red pepper - 1-2 pieces
- Vegetable oil - 60 ml
- Salt - 1 tbsp.l.
- Carrots - 100 g
- Vinegar (essence) – 0.3 tsp.
- Spices and seasonings - 1 tsp.
Step-by-step cooking recipe
Pass the tomatoes through a meat grinder and bring the puree to a boil.
Add chopped green pepper and chopped hot pepper.
Pour in the oil, boil for 10 minutes and add grated carrots and finely chopped onion.
Boil for another 25 minutes, and then add salt, spices and vinegar essence.
Boil the lecho for another 5 minutes and roll it into sterile jars.
