Choose a part of the rabbit with bones, fill it with water and put the broth to cook over low heat. Remove the foam as it appears.
After 20 minutes, add the bay leaf and one peeled carrot and onion each.
Cook the broth for another hour, and then take out the meat and vegetables. These vegetables will no longer be needed.
Add the chopped potatoes to the broth, and after 5-7 minutes – the remaining onion and carrot.
Separate the rabbit meat from the bone and return to the broth, add salt. Cook until the vegetables are ready.
When serving, garnish with herbs to taste.
