Not only vegetable salads and fruit compotes can be rolled up in jars for the winter. For example, such a pea soup will definitely not hurt among the blanks. For cooking, you will need dried, and preferably chopped peas.
Ingredients
- Peas (stabbed) – 1 kg
- Carrots - 1 kg
- Onion - 1 kg
- Bell pepper - 1 kg
- Vegetable oil - 200 ml
- Tomatoes - 2 kg
- Sugar - 4 tbsp.l.
- Salt - 4 tbsp.l.
- Vinegar - 70 ml
Step-by-step cooking recipe
Soak the peas overnight, and then boil according to the instructions until half cooked.
Grate the carrots and finely chop the onion and pepper. Fry the vegetables for 15-20 minutes in oil until soft.
Peel the tomatoes and put them through a meat grinder.
Add tomato puree, salt and sugar to the vegetables. Put the peas there as well.
Cook everything under the lid for 40-50 minutes on low heat.
Pour in the vinegar 5 minutes before the end and roll the soup into sterile jars.
