Peel the zucchini, cut into small cubes.
Peel tomatoes, chop.
Grate carrots, peel onions and finely chop.
Fry onions and carrots in oil for 7-10 minutes.
Add the zucchini and cook for 10 minutes, stirring occasionally.
Add tomatoes, salt and sugar. Cover with a lid and simmer on low heat for 20 minutes.
Puree the mass with an immersion blender.
Pour in the vinegar, stir and remove from the heat after 1 minute.
Spread the hot caviar in sterilized jars, roll it up and wrap it with a thick towel for a day.
