There are so many options for cooking olivier that everyone will certainly find a recipe to their liking. You can even make a diet salad without sausage. The rest of the set of products remains unchanged: eggs, potatoes, carrots, peas and cucumbers.
Ingredients
- Potatoes (boiled) – 3 pieces
- Carrots (boiled) – 200 g
- Chicken eggs (boiled) – 4 pieces
- Cucumbers (salty) – 3 pieces
- Green peas (canned) – 1 bank
- Mayonnaise (lean) – 180 ml
- Ground black pepper - to taste
- Salt - to taste
- Greenery (for decoration) – a couple of leaves
Step-by-step cooking recipe
Cut one egg in half, and cut a couple of thin slices from half a cucumber with a vegetable peeler. All this will go to decorate the finished olivier.
Cut potatoes, carrots, remaining eggs and cucumbers into small cubes.
Rinse the green peas under running water and dry them lightly on a paper towel.
In a deep bowl, mix potatoes, eggs, carrots, cucumbers and green peas.
Add salt, ground black pepper and lean mayonnaise. Gently mix the salad with a spoon so as not to crush the vegetables.
Put the olivier on plates in portions using a cooking ring. Garnish with half an egg, slices of cucumbers and herbs.
