Ingredients
- Cucumbers - 1 kg
- Pearl barley - 400 g
- Tomatoes - 400 g
- Carrots - 200 g
- Onion - 200 g
- Water - 200 ml
- Vegetable oil - 100 ml
- Vinegar - 100 ml
- Sugar - 2 art.l.
- Salt - 2 tbsp.l.
Step-by-step cooking recipe
Pre-rinse the pearl barley and soak for a couple of hours.
Finely chop the onion and carrot, and fry in oil for about 5 minutes.
Add grated tomatoes and diced cucumbers.
Add pearl barley, water, sugar and salt to the same place.
Simmer the dressing under the lid for about 20-30 minutes.
Pour in the vinegar and roll up the pickle in sterile jars.
