Eggplant like mushrooms with mayonnaise for winter

If you love eggplant, but want something more original, then this recipe is for you. With the addition of mayonnaise and spices, something fundamentally new turns out. And no one can distinguish such eggplants from mushrooms by taste – a very interesting solution.
Ingredients
- Eggplant - 750 g
- Onion - 250 g
- Spices and seasonings - 1 tbsp.l.
- Salt - 0.5 tbsp.l .
- Mayonnaise - 100 g
- Vegetable oil - 50 ml
Step-by-step cooking recipe
Chop the onion and fry in oil until golden.
Peel the eggplant, cut into cubes and boil in salted water for 2 minutes after boiling. Flip it into a colander.
Squeeze the eggplants from excess water and fry in oil until browned, too.
Mix all the ingredients and put them in sterile jars.
Sterilize them for another 15 minutes and roll them up for the winter.
