Wash and peel all the vegetables. Cut the onion into half rings, zucchini into cubes, and grate the carrots on a coarse grater.
Fry the zucchini in vegetable oil and set aside.
Fry the onion in the same pan, set it aside for the zucchini, and do the same with the carrots.
Chop all the vegetables in a blender or with a meat grinder, bring to a boil and simmer for 30 minutes under a lid on low heat.
