How good it is to have a ready-made preservation in the pantry. And imagine if there is always ready-made soup at hand! Prepare a pickle with potatoes and pearl barley according to my recipe and you will forget what cooking is in unpredictable situations.

Step-by-step cooking recipe

Rinse all the vegetables well. Clean them and prepare them for further use.

Grate the carrots on a medium grater. Cut cucumbers and potatoes into cubes.

Cut tomatoes in half and grate. Cut the onion into small cubes.

Put cucumbers, onions and carrots in a large saucepan with a thick bottom. Pour tomato puree over the soup, add a little water, salt, add sugar and put it to boil.

Boil the mixture for 15 minutes, add vegetable oil, barley and potatoes. Cook until half cooked.

15 minutes before the end of cooking, add vinegar, mix well and cook for another 15 minutes.

Pour the finished soup into sterilized jars. Store in a cool place, eat in winter when you don't have time to cook soup.
