Pickle with zucchini and pearl barley for winter

In addition to standard canned and pickled vegetables, I really like preparations that simplify life in the future. For example, they save time on cooking soups and main dishes. This pickle with zucchini and pearl barley will be exactly such a preparation.
Ingredients
- Zucchini - 2 kg
- Tomatoes - 1 kg
- Carrots - 700 g
- Onion - 1 kg
- Pearl barley - 2 glasses
- Bell pepper - 9 pieces
- Vegetable oil - 1 glass
- Salt - 4 tbsp.l.
- Sugar - 2 art.l.
- Vinegar - 0.5 glasses
Step-by-step cooking recipe
Soak the pearl barley in advance for an hour.
Peel the tomatoes and chop them with a blender.
Dice the zucchini and pepper, chop the onion and grate the carrots.
Fry the onion in oil for 5-7 minutes.
Add carrots and fry as much more.
Add the rest of the ingredients except vinegar.
Simmer the pickle for an hour on low heat and pour vinegar 10 minutes before the end.
Roll it up in sterilized jars.
