Today I will share with you a wonderful recipe for cheesecake without baking. Cooking it is very simple! The only difficulty lies only in waiting for the necessary time. The base for the cake is made of shortbread cookies and butter.
Ingredients
- Cottage cheese - 300 g
- Cookies (sand) – 200 g
- Butter - 100 g
- Gelatin - 30 g
- Pineapple (canned) – 150 g
- Sugar - 2 tbsp.l.
- Cream (fat content from 30%) – 200 ml
- Yogurt (natural) – half a glass
- Water - 200 ml
- Melissa (for decoration) – 1 twig
- Coconut chips (for sprinkling) – 1 art.l.
Step-by-step cooking recipe
Chop shortbread cookies in a blender or crumble with a rolling pin.
Add the melted butter and stir. You should get a mass that holds its shape well.
Cover the split mold of a suitable diameter with baking paper so that the liquid ingredients do not leak out.
Put the dough cake on the bottom of the mold and put it in the refrigerator for half an hour.
Fill the gelatin with warm water and leave it to swell for 15 minutes.
Beat the cooled cream with sugar and yogurt with a mixer.
Add the curd cheese, half the gelatin and mix until smooth.
Pour the curd mass into the mold with the dough and put it in the refrigerator for 1.5 hours.
Chop the pineapples in a blender until smooth.
Add the remaining gelatin and mix well.
Pour the pineapple mixture into the mold and send it back to the refrigerator for 4 hours.
Sprinkle the finished cake with coconut shavings and decorate with melissa.
