A great option for a summer dessert. Lemon cheesecake is prepared without baking, which means you don't have to turn on the oven. The main cake consists of sugar cookies, butter and lemon juice, and mascarpone, condensed milk and lemon zest are used for the cream.
Ingredients
- Cookies (sugar) – 200 g
- Butter - 80 g
- Mascarpone - 250 g
- Condensed milk - 350 g
- Lemon zest - 1 tsp.
- Lemon juice - 1 tbsp.l.
- Gelatin - 5 g
- Water - 80 ml
Step-by-step cooking recipe
Chop the cookies in a blender.
Add the melted butter, lemon juice and mix.
Lay out on the bottom of the split mold, forming high sides. Put it in the refrigerator for 2 hours.
Fill gelatin with cold water for 10 minutes.
Mascarpone mix with condensed milk and whisk well.
Add the lemon zest, the blank with gelatin and mix.
Put the cream in a mold on a cookie base and put it in the refrigerator for another 8 hours.
