In addition to standard pickles for the winter, you should definitely stock up on ready-made soups. They will come in handy when there is no time to cook dinner. My family loves pickle soup with cucumbers. I cook it without vinegar, and it is perfectly stored all winter.
Ingredients
- Cabbage - 1 kg
- Cucumbers - 500 g
- Carrots - 300 g
- Onion - 300 g
- Vegetable oil - 60 ml
- Tomato paste - 50 g
- Black Pepper - 6 peas
- Sugar - 1 tbsp.l.
- Salt - 2 art.l.
- Water - 400 ml
Step-by-step cooking recipe
Chop the cabbage, cucumbers and peeled onions. Grate the carrots.
Fry onions and carrots in oil for 5 minutes.
Add cabbage, cucumbers, black pepper and simmer for 10 minutes.
Mix water, tomato paste, sugar and salt.
Pour into a saucepan with vegetables and simmer on low heat for 20 minutes.
Put the hodgepodge into jars, roll it up and wrap it up for a day with a warm blanket.
