Marshmallows are especially popular among all desserts. Gentle and airy, it looks like a small cloud. Not everyone knows that it can be easily cooked at home. And it's surprisingly simple. I share a recipe for apple marshmallow with agar-agar!
Ingredients
- Applesauce - 250 g
- Egg whites - 40 g
- Agar-agar - 8 g
- Sugar - 600 g
- Water - 140 g
Step-by-step cooking recipe
In a deep saucepan, mix the agar-agar with water.
Bring the mass to a boil over low heat. You should get a dense gel-like consistency.
Add sugar in a thin stream and cook for 5 minutes, stirring constantly.
Separately mix egg whites and applesauce, beat everything with a mixer until a thick mass is formed.
While continuing to work with the mixer, carefully enter the agar-agar syrup. Beat at high speed for another 4 minutes.
Transfer the mass into a pastry bag and put it on parchment paper.
Dry the marshmallows for 6-8 hours at room temperature. Carefully remove and glue the halves together.
