In the watermelon season, I try not only to buy juicy berries often, but also to cook all kinds of desserts from it. My household is very fond of watermelon marshmallows. Well, what pleases me is that instead of harmful cakes, they eat vitamin treats.
Ingredients
- Applesauce - 200 g
- Watermelon - 400 g
- Egg whites - 120 g
- Sugar - 550 g
- Syrup (glucose) – 2 art.l.
- Agar-agar - 20 g
- Citric acid - on the tip of the knife
Step-by-step cooking recipe
Chop 250 g of watermelon in a blender.
Squeeze out the juice from the remaining watermelon pulp.
Mix everything in a deep bowl, add applesauce, glucose syrup and 400 g of sugar.
Heat over low heat, add agar-agar and boil for 4-5 minutes, stirring frequently.
Separately whisk the cooled proteins with citric acid and the remaining sugar.
Pour in a thin stream of watermelon billet and beat at high speed for 5 minutes.
Put the resulting mass in a pastry bag and put it on a silicone mat. Dry watermelon marshmallows for 1 day.
