One of my favorite treats for and without is marshmallows. It is good for every day and for holidays. Even on such special holidays as New Year. A piece of marshmallow is quite possible to afford even after a hearty feast, because it is very light.
Ingredients
- Black Currant (frozen) – 200 g
- Agar-agar - 5 g
- Sugar - 300 g
- Egg whites - 1 piece
- Water - 125 ml
Step-by-step cooking recipe
Whisk the berry with a blender, add 100 g of sugar and boil the puree over low heat until thickened. Let it cool down.
Beat the puree with a protein mixer until fluffy.
Mix 200 g of sugar and agar-agar, pour water, bring to a boil and boil for 5 minutes.
Whipping the protein mass, pour in the syrup in a thin stream.
Whisk everything together a little more and put the marshmallows on parchment with a pastry syringe.
Let it freeze and decorate to taste.
