Ingredients
- Pistachios (chopped peeled) – 3 tbsp.l.
- Egg whites - 40 ml
- Agar-agar - 8 g
- Sugar - 350 g
- Water - 100 ml
- Applesauce - 300 g
Step-by-step cooking recipe
Beat the applesauce with a mixer.
Add the pistachios crushed in flour and whisk again.
Get the protein and continue whipping until airy.
Boil water with sugar and agar, and boil for 5 minutes.
Continuing to beat the protein mass, pour in the syrup in a thin stream.
Whisk still for a couple of minutes and put the marshmallows on parchment with a pastry syringe.
Let the marshmallows freeze on the table.
