Pour 1 tablespoon of gelatin and saffron into a small amount of water (a couple of tablespoons). Mix well and leave for a few minutes.

When the gelatin swells, mix it with milk. Bring to a boil over low heat. Add honey and set the mixture to cool.

Grind the cottage cheese through a sieve or using a blender. Then add powdered sugar to the curd mass and mix well.

Pour the milk with gelatin into the curd mass, mix well. Add the cream at room temperature and mix again.

Sprinkle saffron on the bottom of the mold. Pour the resulting mixture into the mold.

Send the finished dessert to the refrigerator for 2-3 hours. After the dessert freezes, decorate it with berries or a sprig of mint and treat the guests.
