Why buy marshmallows in the store if you can easily cook them at home? Moreover, it is not necessary to be limited to classic options. You can, for example, make an unusual mint marshmallow. I must say right away, the dessert will turn out so green only if you add food coloring.
Ingredients
- Applesauce - 400 g
- Egg whites - 2 pieces
- Mint - 4 twigs
- Powdered sugar - 120 g
- Agar-agar - 15 g
- Water (boiled) – 300 ml
- Food coloring (green) – 1 drop
- Salt - at the tip of the knife
Step-by-step cooking recipe
Remove the mint leaves from the twigs and grind in a blender.
Pour the resulting mass with hot water, cover with a lid and put aside for 30 minutes.
Strain through a double layer of gauze.
Heat to 50 degrees, add agar-agar, stir and leave for 10 minutes.
In a deep bowl, mix applesauce, egg whites and salt. Beat with a mixer at high speed until the mass becomes fluffy and white.
Preheat the billet with agar-agar over low heat to 85 degrees, mix with powdered sugar.
Without stopping whipping the protein mass, pour in a thin stream of hot syrup, add the dye. Whisk everything together for another 3-4 minutes.
Using a pastry bag and a special nozzle, put the marshmallows on a surface covered with parchment paper. Dry at room temperature for 24 hours.
