Fried eggplant goes well with hummus, and if you add garlic to them, you will get an incredibly delicious snack. Experiment with adding various spices, for example, paprika or ground chili pepper, if you like it sharper.
Ingredients
- Eggplant - 1 piece
- Hummus - 150 g
- White bread - 5 slices
- Garlic - 2-3 cloves
- Cherry tomatoes - 10 pieces
- Parsley - 2-3 twigs
- Vegetable oil (for frying) – 3 tbsp.l.
Step-by-step cooking recipe
Cut the eggplant and soak it in salted water for 20 minutes.
Drain the water, dry the eggplant slices and fry them in vegetable oil until golden brown.
Dry the white bread in a toaster and cut in half. Put a circle of eggplant on each half.
Squeeze garlic on top.
Carefully spread the hummus with a teaspoon.
Garnish with cherry halves and a parsley leaf.
