I propose a non-classical variation of the popular French snack. Perhaps it is not quite right to call it croquettes, but this does not detract from its advantages in any way! Thanks to the expressive taste of broccoli, it turns out very unusual!

Step-by-step cooking recipe

Disassemble the broccoli into inflorescences, boil in boiling water until soft and mash into a puree.

Add salt, eggs, grated parmesan, and mix thoroughly. If the mass turns out to be very liquid, add a spoonful or two of breadcrumbs.

Form small balls or tortillas from the puree – as it is more convenient.

Roll each croquette in breadcrumbs and fry in vegetable oil on all sides.
