Classic potato croquettes are an amazing find of French cuisine. This is a universal snack or side dish that literally flies before our eyes. Unlike most other deep-fried dishes, they can even be reheated, and they remain delicious.
Ingredients
- Potatoes - 2-3 pieces
- Chicken eggs - 1 piece
- Flour - 2 tbsp.l .
- breadcrumbs - 2 tbsp.l .
- Butter - 1 art.l.
- Provencal herbs - 1 tsp.
- Vegetable oil - 150 ml
Step-by-step cooking recipe
Peel the potatoes, chop them coarsely and boil until tender in salted water.
Separate the protein from the yolk and whisk the protein into a foam with a whisk.
Send the yolk to the potatoes and mash it into mashed potatoes. Add herbs and butter to the same place.
Roll up nut–sized balls and roll in flour, then in protein and then in breadcrumbs.
Fry them in vegetable oil until a beautiful golden hue.
