Place the turkey drumsticks in a wide saucepan.
Pour in water, add spices and cook for 3 hours over low heat.
Add carrots, salt, peeled garlic and onion. Boil everything together for another 40 minutes.
Remove the shins and cool slightly.
Separate the meat from the bone and tendons, chop it, put it in a prepared dish.
Strain the broth through a double layer of gauze and pour it into containers with meat.
Remove the jelly in a cool place for 4-6 hours.
