A good way to replace sugar with something useful, and at the same time just diversify the usual taste is to cook cherry compote with honey. I prefer to drink it hot and add some spices, like cinnamon and cloves. Almost mulled wine!
Step-by-step cooking recipe
Pour water over the cherries and bring to a boil.
Cook the compote for 7-10 minutes until the desired taste.
Add honey with lemon juice, boil for another minute and remove from heat.
