Peel the ginger and grate it.

Put the ginger in cheesecloth and squeeze the juice well into a bowl.

Mix soy sauce, olive oil and honey. Warm up in a water bath, stirring frequently.

Add starch, ginger juice and boil over low heat without bringing to a boil. Turn off the heat when the sauce thickens slightly.
