Step-by-step cooking recipe
Melt the butter in a deep saucepan.
Mix the yolks with lemon juice, put them in a small saucepan and place them in a water bath.
Beat the mass with a mixer at medium speed and pour in a thin stream of melted butter in parallel. The sauce should thicken.
Add white pepper, salt and, if necessary, a little more lemon juice.
