Mashed soups are good because they allow you to combine the most unusual and unexpected ingredients. For example, today I propose to cook such a pea soup-puree with broccoli. I'm sure you haven't tried such an original recipe yet.
Ingredients
- Vegetable broth - 1.5 l
- Peas - 400 g
- Broccoli - 1 head
- Leek - 1 piece
- Olive oil - 1 art.l.
- Spices and seasonings - 1 tsp.
- Thyme - 2 twigs
Step-by-step cooking recipe
Soak the peas in advance, and then boil them in vegetable broth until soft.
Add the cauliflower inflorescences and cook for a couple more minutes.
Fry the chopped leeks separately and add them to the soup too. Cook for 5 minutes.
Whisk everything with a blender along with spices and thyme, and serve.
